Cakeroll



This is what you need:

For the cake:

3 eggs, organic

40gr stevia sugar

1/5 tsp vanilla bourbon, organic

85gr rice flour

2 tsp baking powder, organic

1/5 to 1 tsp guar gum 


For the pudding:

250 ml unsweetened almond milk

1 tsp vanilla bourbon, organic

2 egg yolks, organic

20 grams cornstarch or 10-15 grams arrowroot flour

25 grams of stevia sugar

Jar of organic strawberry jam or portion of strawberry jam without sugar (see recipe)



This is how you make it:

Preheat the oven to 180 degrees.

Make a batter from the cake roll.

Line an oven dish with baking paper.

Make a half cm thick square with the batter on the baking tray.

Make sure you have a large square for a nice roll.

Bake in the oven for 10-12 minutes.

Then take out and spread the square with strawberry jam first, a thin layer and then the pudding, which is still warm, as well as a thin layer.

Then roll up and sprinkle lightly with stevia granulated sugar.

Let cool on the plate for at least 3 hours.

Then put in the fridge for a night.

Then remove and cut into 2cm slices.


Preparation method of the pudding:

Make the pudding by stirring 1/3 part milk into the starch, egg yolks.

Heat the rest of the milk in a saucepan and add the sugar and vanilla bourbon.

Bring to the boil and add the pudding mixture and stir vigorously with a whisk until the pudding thickens and thickens.

Do not let the pudding for the sandwiches cool down because then it will solidify, let alone on a low fire in the meantime.


Preparation method for the chocolate topping:

You need this: 150 gr dark chocolate of at least 75%

Or make your own: 50gr cocoa butter 50gr raw cocoa powder + 1 EL 2 EL raw honey + a few drops of pure stevia to taste 1 tsp vanilla bourbon

Optional: small pinch of salt

This is how you make it:

Melt the cocoa butter with the honey and vanilla bourbon au bain marie.

Stir in the cocoa powder and taste if it is sweet enough.

Pour gently over the cake roll.

Coconut pudding



Chocolate mousse



This is what you need:

Puff pastry:

1/5 cup almond flour

1/2 cup tapioca flour

1 cup full-fat coconut milk

1 tsp salt 1 egg yolk, organic


Filling:

1 apple, peeled and diced

1 egg, organic

2 tbsp almond flour

Pinch of vanilla powder, organic without sugar

2 tbsp soaked raisins 

1/2 tbsp raw honey 


This is how you make it:


Preheat the oven to 180 degrees.

Take a brownie mold and grease it lightly with oil.

Make a batter with the ingredients for the puff pastry and spoon a thin layer into the mold so that the surface is nicely covered with dough.

Place in the oven for 15-20 minutes.


Make the mixture for the filling by mixing everything together in a small bowl. Remove the puff pastry and let it cool for 3 minutes.

Pour out the sheet of puff pastry on a sheet of baking paper so make sure it is ready.

Process the puff pastry immediately while it is still warm!

Spoon the filling 3 cm from the edge into a nice strip of 3 cm and roll it up nicely in a smooth movement, don't want to roll up the roll tightly!

Place on a baking tray lined with baking paper and brush the apple strudel with the egg yolk mixture, brush the seam along the side also with the mixture so that it remains.

Bake on hot air for 20-25 minutes.

Take out and let it cool for a while on the plate.

This is what you need:

200ml almond yogurt 

2 tbsp cinnamon

1 1/5 tbsp raw honey

Apple peeled, diced and baked, cooled Optional for garnish: Nut crumble, toasted pieces of hazelnuts or almond flakes, pinch of nutmeg, half tsp cinnamon and biscuit spices.


This is how you make it:


Stir everything except the garnish.

Take a glass bowl or glass and cover a bottom with nut crumble, then the yogurt, finish with pieces of almond flakes or pieces of roasted hazelnuts.

This is what you need:

250gr frozen fruit

1 tsp manuka honey

100gr almond/coconut yogurt

12-15 drops of stevia


This is how you make it:


Blend all ingredients vigorously and you're done!

This is what you need:

3/4 cup full-fat coconut milk

1 and 1/4 cups coconut milk 

2 tsp arrowroot

Pinch of salt

1 egg yolk, organic

1 tbsp coconut oil

Pinch of vanilla powder, organic

Optional: 1/2 cup toasted coconut flakes


This is how you make it:

Mix 5 tbsp milk together with the vanilla bourbon, egg yolk, stevia, vanilla powder, pinch of salt, coconut milk/cream, margarine, arrowroot in a bowl.

Bring the rest of the milk to the boil, stirring, and add the pudding and stir until a firm mass is formed, remove from the heat and divide into jars, let cool at room temperature and store in the refrigerator.

This is what you need:

105gr dark chocolate sweetened with stevia 

3 eggs, organic

50ml plant-based milk

2 tbsp organic honey


This is how you make it:

Beat the egg whites completely stiff to white peaks.

Melt the chocolate in a bain marie, add the honey and remove from the heat.

Then stir in the egg yolks

.Carefully fold the chocolate under the egg white, divide between glasses.

Place in the fridge for a few hours to set.
